Ingredients:
1 kg Colokas
750gr Lamb(leg)
6 spoonfuls of cooking oil
3-4 stick of celery
1 tablespoon of tomato pure
The juice of half a lemon
Salt and peper to taste
6-7 glasses of water

COLOKAS
One of the most populer
traditionals cypriot winter dishes. The colokas plant is a
large-leaved root vegetable, in some ways resembling the common
potato, that grows in many regions of the country.
Preparation: Place a little cooking oil in a saucepan and heat.
Add the chopped lamb's meat and fry gently
until browned. Now remove the meat from the
pan and replace with the celery stalks which
should be gently frien until golden. Then
add the tomato puree. Stir and add the meat
to the mixture. Now pour in the water and
leave to simmer for 30 minutes. While the
sauce is cooking you can prepare the
colokas. Take the vegetable and wipe off any
soil on its surface. Then peel off a thin
layer of its outer surface exposing its
clean white flesh. Again wipe its surface
with a clean cloth. it is important that you
do not wet the vegetable, as doing so will
affect its texture and taste when cooked.
Cutting from the top of the vegetable
downwards, insert the knife a break pieces
away from the main body. Each piece sholud
be roughly the size of a Brussels-sprout.
Add the Colokas piece to the simmering sauce
and pour in the lemon juice. Leave to cook
until the Colokas takes on the texture of
cooked boiled potato. Serve in bowls and add
pepper and salt to taste. Bon appetite! :)
